Why Defying Gravitea?

Defying Gravitea is founded by Gina R. Cassese. As a fifth-generation chef, being in the kitchen with family and food has always been a prominent part of Gina’s life. Growing up, she worked in her family’s restaurant. There she learned to cook, butcher, bake, and the essentials of day-to-day operations. Gina studied both Exercise and Nutrition and the Culinary Arts and is a pro-figure fitness competitor.

After years of struggling with body-image issues, Gina learned she was intolerant to gluten and dairy. Later, she discovered she had an autoimmune condition causing inflammation. In turn, Gina decided to take her family’s traditional recipes and Grandma’s treats and work them into new gluten- and dairy-free versions and has never looked back! She is thrilled to share her recipes with both the community around her, as well as nationwide.

Defying Gravitea is born out of Gina’s strength to overcome obstacles in life and the kitchen. Baking itself is a science that requires specific measurements and techniques for items to rise and set correctly. Using alternatives to traditional flour and dairy sources creates new obstacles in finding that perfect balance. Through research and testing in the kitchen, Gina found that balance and continues to defy gravity each day.
